Savory Roasted Brussels Sprouts Salad

Finally, a Brussels Sprouts recipe even kids will eat. A bright and flavorful dish.

Serves: 8  Serving Size 1/2  cup.
Prep Time
10 minutes  Cook Time: 15 minutes. Chill Time: 5 minutes.

Ingredients
4 cups quartered Brussels sprouts
1 red onion, sliced
1/3 cup olive oil
Salt and freshly ground pepper to taste
1/4 cup raisins
1/4 cup toasted sunflower seeds
1/4 grated Romano cheese
1/3 cup red wine vinegar

Directions
Preheat oven to 400 F.
In a roasting pan combine Brussels sprouts and red onion. Toss with 2 Tbsp. of the oil and salt and pepper. Roast until just tender, about 15 minutes, turning once during cooking.
Cool 5 minutes and remove to a separate bowl. Toss with remaining ingredients and adjust seasoning with salt and pepper. Serve either hot as a side dish or at room temperature as a salad.
