Savory Italian Vegetable Salad

There’s nothing like a fresh chilled veggie salad in the dog days of summer. Give this deliciously easy recipe a try!

Serves: 10. Serving Size 1 cup.
Prep Time
45 minutes; Chill Time: 2-4 hours.

Ingredients
10 oz. rotini pasta
12 oz. bag Eat Smart® vegetables (any blend)
1 (8 oz.) bottle light Italian dressing
1 medium tomato, chopped
2 sliced green onions
1/2 c. reduced-fat feta cheese
1 c. chopped sweet bell pepper (red, yellow or green)
1 cucumber, peeled, seeded and chopped.
1/2 c. pitted kalamata olives
1/3 c. chopped Italian parsley
¼ c sun dried tomatoes in olive oil, chopped
Salt and pepper to taste

Directions
Cook pasta according to package directions. Drain and cool. Set aside. Bring a large pot of water to a boil. Add Eat Smart® vegetables and cook for two minutes or until slightly tender but still crisp. Drain and rinse with cold water. In a large bowl, mix pasta and Eat Smart® vegetables with ½ cup of dressing. Refrigerate for 2-4 hours to marinate. Add remaining ingredients. Mix and serve. Bon appetit!
