Hearty Vegetable Medley Chowder

As the days get shorter and weather is cooler, this chowder recipe is hearty yet healthy!

Serves: 6. Serving Size 1 cup.
Prep Time
8 minutes; Cook Time: 10 minutes

Ingredients
12 oz Eat Smart Vegetable Medley
2 cans cream of potato soup
1 ½ cups milk
¼ tsp garlic powder
Salt and freshly ground pepper to taste
¾ cup shredded cheddar cheese
½ cup frozen corn

Directions

Lightly blanch or steam 12 ounces of Eat Smart Vegetable Medley, then let cool. Meanwhile, in a medium saucepan combine, soup, milk, garlic powder and season with salt and pepper. Simmer over medium heat for 5 minutes, stirring frequently. While soup is cooking, roughly chop cooled vegetable medley and add to pot. Stir in cheese and corn and continue to cook an additional 7 – 8 minutes or until heated through.

Serving Suggestion

Serve with warm biscuits or fresh baguette.
