Chicken and Broccoli Salad Wrap

Enjoy a fresh, bistro-style wrap, at a fraction of the cost. It’s easy on your waist and your wallet!

Yield
Makes 8 wraps, or 32 appetizer size

Ingredients
1 (12 oz) jar Roasted red peppers
8 oz cream cheese, softened
2 Tablespoons minced chives
1 (34 oz bag) Eat Smart® Broccoli Salad
2-3 cups shredded cooked chicken (use a store-bought roast chicken)
8 Tomato or Spinach Wraps (or large tortillas)

Directions

  1. Drain peppers and cut into thin strips. Set aside.
  2. In a small bowl, mix cream cheese with chives. Place contents of salad mix, separating out the broccoli, in a large bowl.
  3. Roughly chop the broccoli and add back into bowl. Add the chicken and dressing and toss to coat.
  4. On a clean surface lay out one wrap or tortilla and spread with 2 Tablespoons cream cheese mixture.
  5. Place 4 or 5 pepper strips (dividing evenly between the wraps) across the center. Top with a little more than 1 cup salad mix and roll, tucking in the ends, like a burrito. Repeat with remaining wraps and filling.
  6. Cut wraps in half on the diagonal, or into 4 or 5 pieces each for appetizer size. Serve immediately.

    I need more recipes for butternut squash! The recipe from the 2# pack of fresh cut butternut squash was yummy, but need recipes than I can add meat to…casserole style. Thanks!

    I Live in Vermont, and have just tried your Eat Smart Confetti Slaw, which I got at Shaw’s Supermarket. I thought it was very good, being a senior, I ran it through a food processor, to chop it up more, as due to the fact I wear dentures. It would be nice if someone would come out with a product, that was for seniors, finely chopped up. I use a chunky blue cheese dressing mixed with a Russian dressing on it. In fact the first Blue Cheese dressings were a combination of Blue Cheese and Russian Dressing. What they did, was mix the crumbled blue cheese with the Russian Dressing, and marinate it overnite in the refrigerator. They would serve it poured over a wedge of lettuce. I find it makes a great slaw dressing.

    I have already found several recipes I want to try, but cannot find a “print” command.. Are the recipes “print ready”? It is not easy to highlight and print without getting all the pictures, and unecessary stuff.
